Jasmine
Jasmine, alongside rose, is one of the key flowers in perfumery.
Originally from China and India, it has also been cultivated in the Mediterranean, especially in Grasse since the 17th century.
Among its many species, Jasminum grandiflorum and Jasminum officinale are the most commonly used in perfumery.
The harvest takes place from June to November, and the flowers must be picked before dawn and processed immediately.
It takes about 10,000 flowers to obtain 1 kg, with their essence evolving from a green, dry note at the beginning of the season.
